Easter at Hardwicke Bay

Jackie and her family have a beach shack at Hardwicke Bay which is located on South Australia's York Peninsula and I was lucky enough to be invited to tag along and spend Easter with them.

Explorer Mathew Flinders named the region in the early 19th century, and it remains as much of a discovery as it was 200 years ago with pristine white sand beaches and crystal clear ocean. York Peninsula is bordered by ocean on three sides, and is about a two and a half hour drive from top to bottom, travelling through waving fields of barley one moment, the next flicking squid into a turquoise sea. Isabella, Jackie's daughter told me that they have seen bottle nose dolphins from their deck believe it or not. Living in Australia is truly luxurious when you have the world at your doorstep waiting to be discovered! We stopped off for lunch on the drive down to Harwicke Bay at Jackie sister's Linda brand new beach shack, located close to Ardrossan, and feasted on a gorgeous lunch of pasta with duck ragu and sage - simply fantastic! Before we left her partner Chris racked up some blue swimmer crabs from the beach and it was cooked up in no time into a gorgeous crab curry that we feasted on that very night! The drive to Hardwick Bay from Ardrossan was a careful one, watching out for red-tailed Kangaroo's that are known to jump out of the middle of no-where and onto the road to cause fatal accidents - luckily we didn't encounter any on of the local wildlife on our way.

Easter morning I awoke to a glorious day, sun up, clear blue skies reflecting onto the water, glistening under the rays of the sun - it looked so inviting. Unfortunately, in Australia you really do need for the heat to get blisteringly hot before you want to get in and splash about since the waters that lap the shore are brought in from the currents at the poles, which makes it always a good 10 - 15 degrees C difference between the temperature in the air and the water!




I was however more than happy to stare in the blue of the ocean and feel the warmth of the sun on my back as I enjoyed Jackie's husbands barbecued eggs, bacon and toast - the perfect kick start to Easter Sunday.



For lunch Jackie's best friend Kate Honner invited us over to her paddock that stretches for miles and miles. This gorgeous setup of hay bales lined up made a rustic looking long table and set the scene for a ruggedly, Aussie barbecue that was absolutely splendid - except for the flies that attacked us non-stop trying to enter every possible orifice!
Rustic barbecuing - the charcoal smoke billowing out added a unique robust flavour to the meat and I was just glad to add yet another Aussie experience to the collection!

Kransakager - A traditional Norwegian celebration 'cake' featuring at weddings and sometimes birthdays.

A dough made of flour, milk, eggs, sugar and almonds meal is mixed and rolled out several times and then rolled into thin coils and baked in concentric circular pans specially designed for this purpose. After baking each ring is then assembled one atop the other. The texture is brittle and reminiscent of biscotti both in texture and flavour. Great with coffee and simply such a novel idea!

The perfect way to end Easter Sunday, a glass of Semillion-Savingnon Blanc and a stunning sunset to savour it with...

Lunch at Linda's

I have learned recently that birthdays with Jackie's extended family are a big, big affair - mostly because there are so many people - kids, parents, uncles, aunts and close friends like moi, involved. This month there were three birthday celebrations crammed into one afternoon. This of course called for a mega cook-off. Chris stepped up to the plate and readied the Weber, making sure it was fired up, hot and raring to go.

Behind every spectacular meat dish is the best supporting actor, in this case the buttered tatters with parsley and sliced white bread

There's just no going wrong with a classic combination of peppery wild rocket, crunchy pear and creamy Parmesan shavings
Grilled sliced eggplants marinated lightly in Eastern spices


Asian inspired vermicelli glass noodle salad with sliced grilled chicken, bok -choy, cashew nuts and red peppers - treat to the taste buds

Linda's speciality: Roasted butternut squash pumpkins with ripe, plum tomatoes, kalamata olive, haricot -verts, chick-peas and sliced boccocini.

Chocolate cake for the birthday boy Gabriel! HOORAY!

Last but not least: Jhonty's birthday treat would sure have made Homer Simpson green with envy!

Touchdown Adelaide, first stop Harrow Road

After a three month sabbatical it was time to return to South Australia and resume working on my dissertation. Jackie and her family were their usual hospitable selves inviting me to join them for dinner on Sunday night.

Gorgeous Green Garden Salad with Chinese Red Cabbage and a rustic Italian inspired platter of Sliced Grape Tomatoes, Vine Ripened Sliced Tomatoes, Roasted Artichokes,Torn Basil and Shredded Balls of Bococcini.

Can you think of a more appropriate Aussie welcome? Beef steaks says it best I reckon!

Decadent beyond belief: Nigella Lawson's Simple Sponge cake soaked in Ginger Wine, topped with Rich Cream liberally drizzled with Passion fruit and Raspberries.

Seal of Aproval

Any gastronomic trip down under just cannot be complete without a visit to the Singhs. Jackie and Bob of course invited Sameer over to their home for a finger lickin' barbeque dinner. Bob manned the grill, while Sameer added glitzy charm!
It don't get more Aussie then this eh? Throw another shrimp on the barbie!
Rosemary speared pink shrimp with sea salt on the grill.
An array of meats .. sausages, beefy burgers a` la Sanchez and marinated chicken.
Gone fishing! What else can I say?
Kangaroo fillets at the back and baked juicy red peppers..
Cari's killer burgers topped with swiss cheese and stuffed with blue.. oh la la!
I meant it when I said everything tastes better with bacon. Here's proof: these bad boys topped off with bacon - heaven!

And some fruit and a glass of red to wash all that down!
If Wild berries don't do it for you, no worries, try Expresso Creme, and if that don't tickle your fancy either the Macademia with Caramel will have you screaming with delight!
Thank you for a wonderful meal Jackie! And to all three, Jackie, Amy and Cari, cheers for all that you taught me in this year. I will cherish your friendship always.
And bottom line, the gastro girls seal the deal with their aproval. Sameer you passed the test!

Beef on the barbie

Cari Sanchez takes her BBQing very seriously, and to me this is a whole new world of grilling red meat. After a taste of her wicked BBQ sauce on pork ribs I realised the American's have honed their barbecuing skills, perfecting it to a fine art!
I arrived just in time, salad mixed, corn on the cob ready to go, and steaks looking juicy, red and just a tad rare for me to sink my teeth into just yet!

So, the girls get cooking on Amy's outdoor grill that speedily served up some of the best BBQ I've had in a long, long, long time!

And without the booze to go, well it just wouldn't be a BBQ would it.
